Simply speaking, the production of yeast culture includes two different process control processes: yeast cell expansion in an aerobic environment and yeast cell fermentation in an anaerobic environment to produce metabolites. Moreover, the production of yeast cultures is aimed at maximizing extracellular metabolites. The differences in the composition of the medium used and in the control of factors such as peptides, esters, and organic acids during fermentation in the production of yeast cultures also directly contribute to the differences in the composition of metabolites produced during yeast cell fermentation. The presence of different metabolites is the main reason why various fermented products such as bread, beer, wine, whiskey, etc. differ in terms of quality and organoleptic (e.g. taste and smell).
